The Perfect Memorial Day Recipe

Whether you’re hosting a backyard BBQ, heading to the beach, or simply soaking up the long weekend sun, Memorial Day is all about slowing down, reconnecting, and enjoying fresh, seasonal flavors.

I love creating recipes that are not only nourishing but also easy to throw together—and this one hits all the right notes: cooling, colorful, anti-inflammatory, and crowd-pleasing.

Here’s one of my go-to Memorial Day dishes that checks every box for wellness, flavor, and simplicity.

This recipe is:
✔️ Light & hydrating
✔️ Naturally anti-inflammatory
✔️ Packed with fiber + healthy fats
✔️ A perfect dish to bring to a BBQ or picnic

Ingredients (Serves 4–6):

  • 4 cups cubed watermelon (seedless if possible)

  • 1 large cucumber, sliced thin (or spiralized for fun!)

  • 1/2 cup crumbled feta cheese (or dairy-free feta alternative)

  • 1/4 cup fresh mint, chopped

  • Juice of 1–2 limes

  • 1 tbsp olive oil

  • Pinch of sea salt and cracked black pepper

  • Optional: sprinkle of hemp seeds or chili flakes for added texture or heat

Directions:

  1. In a large bowl, combine the watermelon, cucumber, and mint.

  2. Drizzle with lime juice and olive oil. Toss gently to coat.

  3. Top with crumbled feta, salt, and pepper.

  4. Chill for 15–30 minutes before serving for extra refreshing flavor.

  5. Optional: Add hemp seeds or chili flakes for an extra wellness twist.

Why I Love It:

Watermelon is hydrating and rich in antioxidants like lycopene, while cucumber adds crunch and supports digestion. The mint and lime bring brightness, and the feta gives it that creamy, salty balance. It’s the perfect blend of cooling + nourishing—ideal for sunny weekends.
