No-Bake Energy Bites

Ingredients (Makes ~12 bites):

  1. 1 cup rolled oats

  2. 1/2 cup natural peanut butter (or almond butter)

  3. 1/4 cup honey (or maple syrup)

  4. 1/4 cup dark chocolate chips (optional)

  5. 1 tablespoon chia seeds or flaxseeds (for added fiber)

Instructions:

  1. In a mixing bowl, combine oats, peanut butter, honey, chia seeds, and chocolate chips. Stir until well blended.

  2. Roll the mixture into 1-inch balls. If the mixture is too sticky, refrigerate for 10-15 minutes to firm up before rolling.

  3. Place the bites on a baking sheet lined with parchment paper. Refrigerate for 30 minutes to set.

  4. Store in an airtight container in the fridge for up to a week or freeze for longer storage.
