Mediterranean Chickpea Salad Wrap

Instructions:

  1. Prepare the Salad: In a mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, and feta (if using).

  2. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Pour over the chickpea mixture and toss to coat.

  3. Assemble the Wraps: Lay a whole-grain wrap flat and add a layer of baby spinach or arugula. Spoon half of the chickpea salad onto the wrap.

  4. Wrap and Serve: Fold the wrap tightly, tucking in the ends. Repeat with the second wrap. Slice in half and enjoy immediately or pack for an on-the-go lunch.

  • 1 can (15 oz) chickpeas, rinsed and drained

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, diced
