Kat’s Cozy Chicken Soup

There’s nothing more grounding than a pot of homemade chicken soup simmering on the stove. This is my go-to cozy chicken noodle soup — simple, nourishing, and perfect for supporting immunity, digestion, and overall comfort during the winter months.

I love this recipe because it’s unfussy, deeply satisfying, and easy to customize based on what you have on hand. It’s the kind of meal that feels like a reset in a bowl.

How to Prepare

  1. Heat a large stock pot over medium heat with a drizzle of extra virgin olive oil.

  2. Season the chicken breasts generously with salt on both sides.

  3. Place chicken skin-side down into the warm pot and let it sear slightly.

  4. Add the quartered onion, diced carrots, and celery. Stir to combine.

  5. Fill the pot about ¾ of the way with water.

  6. Add ½–1 teaspoon of salt and bring to a gentle simmer.

  7. Cook on medium heat for about 30 minutes.

  8. Remove the chicken breasts and allow them to cool enough to shred.

  9. Add ½ box of pasta (or gluten-free pasta) to the broth and cook according to package directions.

  10. Return shredded chicken to the pot and stir.

  11. Taste and adjust salt as needed.

You’ll Need

  • 2 bone-in, skin-on organic chicken breasts

  • 1 onion, quartered

  • 4 carrots, peeled and diced

  • 2 celery stalks, diced

  • Extra virgin olive oil

  • Kosher sea salt

  • 1 lb pasta or gluten-free pasta

Optional toppings (highly recommended):
Avocado, cilantro, fresh lime juice, diced habanero (use caution!).
