Kat’s Cozy Chicken Soup
A feel-good classic for cold days, busy weeks, and when your body needs a little extra love.
There’s nothing more grounding than a pot of homemade chicken soup simmering on the stove. This is my go-to cozy chicken noodle soup — simple, nourishing, and perfect for supporting immunity, digestion, and overall comfort during the winter months.
I love this recipe because it’s unfussy, deeply satisfying, and easy to customize based on what you have on hand. It’s the kind of meal that feels like a reset in a bowl.
How to Prepare
Heat a large stock pot over medium heat with a drizzle of extra virgin olive oil.
Season the chicken breasts generously with salt on both sides.
Place chicken skin-side down into the warm pot and let it sear slightly.
Add the quartered onion, diced carrots, and celery. Stir to combine.
Fill the pot about ¾ of the way with water.
Add ½–1 teaspoon of salt and bring to a gentle simmer.
Cook on medium heat for about 30 minutes.
Remove the chicken breasts and allow them to cool enough to shred.
Add ½ box of pasta (or gluten-free pasta) to the broth and cook according to package directions.
Return shredded chicken to the pot and stir.
Taste and adjust salt as needed.

2 bone-in, skin-on organic chicken breasts
1 onion, quartered
4 carrots, peeled and diced
2 celery stalks, diced
Extra virgin olive oil
Kosher sea salt
1 lb pasta or gluten-free pasta
Optional toppings (highly recommended):
Avocado, cilantro, fresh lime juice, diced habanero (use caution!).
